    The cooks were always the most over looked job, yet they contributed to the morale just as much as anyone. It’s a hard and thankless job. My hat goes off to all of them. You are appreciated.

      In the military, the cooks are usually the last people you want to piss off.
      The only one and absolute last time I've witnessed this was someone pissed off the cooks at the dining facility, and the thing the whole base had for lunch and dinner were trays upon trays of heated up, canned sardines. Very sad meal(s)

    Wow, mess halls have changed from the 70s. Memories of 30 straight days of mess duty back in June 1974, Camp LeJeune, Area 1, close to A Street. Semper Fi.

      November 1995 I did 30 days of mess duty at chow hall #488 Camp Foster Okinawa. Cooked bacon, ham slices and sausage patties for breakfast. 0400 formation and worked until after evening meal sometimes almost until 2030hrs. Long days, then I went Camp Lejeune and lucked out no more mess duty for me.

      @@tbob8212 mess duty for us 1974, washing pots and pans, mopping the deck and taking our trash. Yes long hours 0430 to some times to 1900. Back then only the MOS qualified Cooks, cooked.

      @@usmc-veteran73-77 Ah yes swabbing the deck, lol! Yes one of my daily duties was to swab the galley deck, two back hallways and clean the ovens we used to cook the breakfast meats. Then during the afternoon prepare the breakfast meats for the next morning. A mess sgt. (cook mos) was in charge of us plus we had Okinawan civilians (honchos we called them) cooking most of the food. But yes certain food items us Marines on mess duty cooked. Others washed pots and pans. We weren't free at night until the mess sgt. inspected the entire chow hall for cleanliness :)

    Always treat your military cooks with kindness and respect. Tell them when you enjoy something. It can seem like a thankless task so it means a lot. Words of wisdom passed on to me from my Air Force father when I enlisted into the Army.

    In Basic, our Platoon Commander was a SOB. A true Mustang. However, one day he stopped the entire chow line because he noticed there was no more salad. He cut in, asked the civilian server to stop and refill the salad. He called back half dozen Marines to ask them if they wanted any. Salad! It was at that moment I realized what a Marine Corps Officer was. He kicked our ass and made sure we never ran out of rounds and salad.

    MCAS Iwakuni. Served there in 1982-83.
    I remember taking the train all over the country.
    Kintai, Hiroshima, Kyoto, Osaka.
    Used to love the old Soba Shop, and running along the sea wall.
    Good duty.

    Spent 13 years in the British Army, only time I ever ate like a King was when I was based on a Royal Air Force base for two years. They had the most perfect food ever! Steak on the menu every single night. Army chow was hit and miss. Funny enough, I was in West Berlin in the 80s and spent the day at (I think) McNair (?) Barracks. US Army (armoured) and the food at lunch time was superb! Oh, and the ops rations, we had so-called 'rat packs' and the US had MREs, superior to our rat packs. If I had my time again, I'd have emigrated to the US in the early 80s and enlisted into the US Forces.

      I wouldn't call it perfect. You must have been on a small RAF station, we don't usually call them bases as such. The only time I had decent food was when I was staff after basic training, the other bases the food was crap. I was also at one base that did not do night scam for people doing gate guard which was disgusting to say the least. You had to wake up hours before your shift just to get fed.

    My second day of Army Basic training at Ft. Dix NJ. Sep 1981, for dinner we had T-bone steaks and lobster tails. Basic Training sucked, but breakfast and dinner was great.

    All I can remember are the breaded 'veal cutlets' served as veal parmesan. They were called elephant scabs. Oh, the powdered eggs were not so good either. Kadena had a great chow hall.

    I know the cooks in my regiment, 5th Marines, worked long hours and crazy schedules. In my opinion, the hardest job in the corps. Hats off to them all.

    The only difference that I see from 1990 and 2019 military chow halls is that they seem to use more 'labelled' ingredients in the mess. I remember silver cans with numbers back when I served.

      I’m an Air Force brat and served for 10 years. I can remember the products on the Commissary like the big white cans of coffee that just said COFFEE on it. My favorite was the plane white pack of cigs that just said “Cigarettes 100s”. The memories. Think I’ll get me some “Frankfurter, Beef”

    I was the secretary (could type 60 wpm) for the EM and Food Service commitie whitch met regularly to improve food at HQ 1st COSCOM Fort Bragg. We instituted special food service times for minority groups. We had Mexican and Southern US food. First time I ever consumed burritos and collared greens. It was to say the least an interesting job helping to get this on. I sent up all the requests on paper and never forwarded any complaints for which the mess sargent was eternally grateful.

    I recently started learning the history of the United States Marine Corps.
    This is because when I was 20 I was working on a CH46E helicopter at a Japanese company called NIPPI.
    I have met a lot of U.S. Marine pilots and soldiers
    Everyone was excellent and kind.
    In Japan, only the current U.S. Marines are reported, not until they learned that they were actually established hundreds of years ago.
    I will continue to learn. Thank you very much.

    Being a cook in the military probably translates quite nicely to the civilian sector. Tons of food industry jobs out there. Managing catering and things like that. Probably make decent money too.

    57 people (so far) are somehow angered or disappointed in some way by military people eating potatoes and chilli pasta. 'Food anger issues' is a concept I had never thought of hmmm.

    Looks good. Food is a big deal in the military. Hats off to those military members who specialize in it. Best chow I had was at Al Asad airbase in Iraq...2003-04 Army chow... I was aircrew and we would request to go plates every time we went there. They had the best food in Iraq or Kuwait.

    Marines in WW2 had to feed rice with maggots (classified as 'protein' or 'meat') to the devil dogs fighting and dying in the pacific. And that's only IF they had a mess unit with them. Hey, God bless and God speed...these marines deserve the best. The previous generation paid the price, let them eat banquette...but I would recommend, as every bite, the bitter taste that was paid previously. My humble recommendation. Bon Appetit' And YES..I AM a combat veteran...

    The last time I ate in the Messhall in Iwakuni was in 1988. The Squadron Duty SNCO were required to eat one meal and log the results. I don't recall ever having a bad meal there.

    I was stationed at MCAS Iwakuni 1988-89. Had mess duty while I was there. I miss that base. I wonder if the Soba guy still drives his little truck around the base selling noodles.

    Looks like the school lunch we had when i was young. Every lunch was prepared same day. Sugar was banned except for a few meals and in some desserts.

    our mess in Iwakuni was a rat trap, fat Gunnies and Mst Gunnies running around dipping into food with their fingers and constantly running out of chow. the snuff line was spoiled hamburgers, and moldy fish sandwiches. forget about condiments or napkins.74-75

    When I was stationed in Iwakuni Japan, the chow hall served the best food I ever ate in the 20 years I spent in the Marines. This was in the mid 90s. The chow hall in Kaneohe Bay (Wing Side) was the exact opposite. Worst food ever.

    As I recall the food was not that bad actually. Most important: Never heard ( or personally experienced) of any cases of food poisoning, and the quantity was not bad either. At times eating at the same place could get boring, but never really had a “bad meal”. V/R JRP

    I remember when cooks covered up weevils in the oatmeal by adding raisins. Glad things have changed. But i still use those SS mess trays at picnics.

    This would be a 5-star restaurant compared to our mess hall..
    I can remember the guy working the griddle back in the day just sweating bullets on what he was cooking for you. At breakfast he yell at you "Eggs" meaning how you wanted them...it didn't matter what you said on how you wanted them they ended up scrambled anyway. Lurch Bco 34 SIG BN.

    Perhaps, you guys can prepare the following :-
    1) pork trotters cooked with vinegar
    2) plain rice
    3) chicken curry with potatoes
    4) deer meat cook with black pepper sauce and ginger

      dflesher65 Yes. Before the Vietnam war camp Hansen was the home of the 9th Marine regiment. The 3rd was at camp Schwab and the 4th Marine Brigade was at Kaneohe, Hawaii.. the battalions of the 9th and 3rd regiments provided a floating battalion that would react to conflicts in the Far East. They would board ships and go to places like Hong Kong, subic bay in the Philippines, and japan. We went to the foothills of mt Fuji at north camp for training.

    my uncle told me stories about the chow hall in the army and coast gaurd, he said they would all get up 4 in the morning on cooking duty and you basically stood there half awake flipping bacon for 2 hours…. the millitary rlly is smth else 😅😅

    chow certainly has improved since i was in 75 to 79 what i remember from japan (the rock)
    was if the creamed beef was good the cooks had no party. if the creamed beef was off then the
    cooks partied ( party would consist of the cooks grabbing as much fruit punch as they could
    and everyone would buy a 5th of whatever i mean jack Daniels, southern comfort crown royal
    you name it and dump it in the barrel of punch now called Mojo

    One time when I was a E3 in the Army. I had to go to Ft. Irwin for training. Our Airplane had engine trouble and we had to land on a Air Force base. We went to chow and it was the best food I ever had. When I got done eating. My squad and I got up to take our tray of food to clean it and stack it away. A one star General looks at me and said. “ You stupid fucks. We have civilians who pick up your trays.

    My son did 4 yrs Army and 9 months Afghanistan and said he never seen meals like this. Dull,bland and no seasoning. We sent care packages because he said their food was tasteless. The meat taste like cardboard and veggies tasted rotten

    Camp Smith Hawaii 1984-1988. One choice of entree, couple sides with Veggies. Also had leftovers from day before. Want 2nd’s ? Peanut butter and jelly and bread and butter at the end of the line. We always at at Hickman Air Base, two to three choices, plus good leftovers, and seconds. Plus beer sold all nite at the air terminal.

      OOH RAH there Pat. When I was stationed at Kaneohe Marine Corps Air Station, Grunt Division LOL. We would walk over to the air wing side and eat there. Food was much better and they had salt and pepper right on the table. LOL and you ate off plates.

    Ok, this officially takes me back. iwakuni Japan, 1987.... Sill had the f-4 there when I was first deployed. I wonder if they still have the ammo rails that were used for long removed AA guns,, Only thing I didn't like about being there, is my Barracks was on the N end of the base, and the F-4 would take off from North to South not far from me.
    Oh, and MWSS 171, just for the record.

    My Uncle visited Fort Campbell in the 1980s and he ate in the Enlisted Dining hall and he said that was the best food he ever ate. He told the cooks that and he was surprised by a snack that was given to him: two fully dressed cheese burgers with fries and a Coke. No wonder why the President eats good with military cooks.

    I was USAF. Ate in all branches mess halls. Food was always good no matter who made it. Vietnam of course was another story. Lots of powdered eggs for breakfast or there was always plenty of C- Rations. We still ate better then the average Bear.

    Mmmm. Never had a bad meal in any branch chow hall. The best part was that there was always an E-7 who was in charge of that chow hall. If you had a complaint about the chow being served, he was "always" willing to hear your complaint. Lol...
