Homemade Bacon

Today I made some homemade bacon! The bacon was super somkey and got really crispy. This was so good and absolutely delcious! Nothing beats homemade!!
I cured my 5 and a half pound pork belly for 5- 7 days flipping in the refrigerator every 2-3 days so the cure gets all sides. My pork belly was skinless so after smoking make sure to wipe of the top fat with a paper towel. (If its skin on you can just remove the skin) I smoked this at 200 degrees farenhiet until it reached an internal temperature of 165 degrees farenheiet. I would let the pork belly rest for al least 3 hours so the fat can solidify. Then slice your bacon thin or thick, fry it up, and enjoy!
For the Cure (for 5 and a half pounds of Pork Belly):
1/2 Cup of Salt
1/2 Cup of Brown Sugar
1 tsp. of Curing Salt
Optionally 1 bay leaf and a couple sprigs of fresh rosemary and thyme.
