Wow! Your breakfast/tiffin recipes are different from others. How refreshing. Thank you so much for all your recipes. I have tried out many of them. All ❤ Your style of narration is so good, so easy to follow, makes even beginners try their hand at cooking.😊 My only request is not to add eno/soda. It is not good for health. I always get a stomach ache when eno/soda is added. Instead 1-2 tbsp of soaked poha and/or half a tsp of soaked methi dana, grind in a mixer and add to the batter. It will give the fluffy & crispy effect, add to the taste and is healthier. I am a senior citizen. Now I too cannot have spicy and rich food any more. So I have to make something alag se for myself. These recipes are very convenient for me. I do make millet flour + dals/pulses dosas or uttapam or dhokla with veggies added sometimes. Muthiya and Patra or Adu vadi - steamed snacks with arbi leaves & flour are also good. Boiled sprouts bhel was my children's favourite tiffin - boiled black/green/kabuli chana/moong/matki sprouts with salt. Layer these with a mix of finely chopped tomatoes, lots of lemon juice & fresh coriander leaves, salt, pepper, chat masala. Sprinkle sev or farsan on top (optional). I didn't add onions in their tiffin because it stinks. 😊 I liked the jaggery-coconut parathas. A good alternative to puran poli. The pasta is a good one, better than having the packaged ready to eat pasta with dehydrated veggies & masala that we usually have. For senior citizens like me, if it's difficult to digest milk cream, plain milk or home made fresh, crumbled paneer can be a good option. A stuffing of vegetables that kids don't like, for eg. Lauki, pumpkin, cucumber, radish, carrots, beetroot, in a paratha is also a favourite with kids. Ajwain added to Palak . Just grated the veggies. In a oil+jeera tadka, add chopped onions, a flake of crushed garlic, grated ginger, stir fry till the kacchapan is gone. Add veggies, salt, turmeric, chilly powder, dhaniya-jeera powder, half tsp sugar, cover & cook. Add 1-2 tbsp of lightly roasted besan & chopped coriander leaves. Add lemon juice. Cool and stuff this in the parathas. The stuffing can be readied at night & stored in an airtight glass container in the fridge for the next day's tiffin. Similarly, multi grain flour dough can be readied at night itself.😊 Ajwain added to Palak parathas gives a hat ke taste. Once again thank you for giving us additional healthy options for tiffin for kids and breakfast/lunch/dinner for senior citizens. 🤗
