Rock Cakes Episode 5 Budleigh Salterton for German week

The fifth episode in our #rockcakes series, baking parts of the Jurassic Coast, following the weeks of Bake Off. This week features Budleigh Salterton in lebkuchen and black forest gateau for German week.

Recipe: Lebkuchen - Mix 250g plain flour, 85g ground almond, 2 tsp ground ginger, 1 tsp ground cinamon, ½ tsp bicarbonate of soda,1 tsp baking powder, pinch of nutmeg, ground cloves and pepper. Heat 200ml clear honey with 85g butter on a low heat until butter melts. Mix with dry ingredients until evenly combined. Roll dough into balls and flatten. Bake for 15 minutes on Gas 4 (180 degrees C). Cool before adding topping Icing: Mix 105g icing sugar 1-2 tbsp water and 1 egg white. Add food colouring as desired. Dip biscuit in icing / melted chocolate to coat. Black Forest Gateau - Heat oven to Gas 4. Grease and line at least 2 cake tins. Melt 75g chocolate and 175g salted butter. Separately, mix 300g plain flour, 375g caster sugar, 25g cocoa powder and 1 tsp bicarbonate of soda. Whisk 2 eggs & buttermilk. Add all mixes together with 100ml boiling water. Whisk to remove lumps. Divide mixture between tins. Bake for at least 25 minutes or until skewer comes out clean. Once baked, skewer cake several times and drizzle cherry juice and kirsch over top. Whisk 200ml cream with 3 tbsp icing sugar and splash of cherry juice / kirsch until softly whipped. Assemble cake layers. Spread chocolate spread over top layer and decorate.
