1 kg mutton (goat or lamb), cut into pieces
half kg tendy
1 cup yogurt
2 tbsp ginger-garlic paste
1 tsp turmeric powder
Salt to taste
For the curry:
4 tbsp oil or ghee
2 large onions, finely sliced
2-3 green chilies, slit
2 tomatoes, finely chopped
1 tbsp ginger-garlic paste
1 tsp cumin seeds
2-3 cloves
2-3 green cardamom pods
1-2 bay leaves
1-inch cinnamon stick
1 tsp red chili powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
Fresh coriander leaves, chopped for garnish
Instructions:
take a pressure cooker add mutton tomato and onion and all spices add 2 glass of water make the till and cook for 10 minutes
now remove the lid and add ghee cook for 5 minutes add ginger garlic paste and now add tendy
cook foe 5 minutes
add yogurt cook for 2 minutes
add garam masala
now add one small bowl of water to make soorba
cook for 10 minutes
Finishing Touches:
Once the mutton is tender, open the lid and check the consistency of the gravy. Adjust the salt and spices as needed.
Sprinkle garam masala and mix well. Simmer for another 5 minutes.
Garnish with freshly chopped coriander leaves.
Serving:
Serve hot with naan, roti, or steamed rice.
