That's because eternal's art style was literally staying true to the classic doom art style. That's why it's cartoony (In a good way) and colorful, which is not a bad thing IMO...
Agreed. Eternal just looked too cartoony and generic for my taste. Plus the dialed back, kinda silly looking gore and graphics also really set me off. The weapons, demons, doomguys armor, etc. all kinda looked like they were made out of plastic

It's a damn good game, the problem was that it just isnt traditional doom. 2016 basically fixed their reputation and showed that doom can get a good reboot after all.

DOOM 2016's music was godly, it was near perfect. But then Mick Gordon decided it wasn't enough and went twice as hard with DOOM Eternal. If 2016's was godly then Eternal's was the Slayer himself
