The guy who plays Fak is Matty Matheson. He is a well known chef and restauranteur. He is also an executive producer on the show. He has a TH-cam channel and some series on the Vice youtube channel. Also when you see an actor preparing food it is them. Jeremy and Ayo went to school and trained but everyone was taught and practiced to make whatever dish was in the scene. All real food .

CDC means chef de cuisine, basically head chef. Carmy was CDC at the top restaurant in the world.
