- A shop in Muzaffarabad, Azad Kashmir sells kulchay that are very popular. People come from all over Pakistan to buy kulchay and send or take them abroad as well. These kulchas are a specialty of Muzaffarabad and are not available anywhere else. It takes more than 2 hours to prepare a single batch of kulchas in tandoor. Kulchas are in two flavors; sweet and salty. Sweet kulchas are often eaten with tea and salty kulchas with gravies. Dear UrduPoint Team: Please do some REAL RESEARCH before broadcasting such shoddy stuff . . . Kashmiri Qulcha is slightly salty, has a ribbed appearance in the center and has a raised, puffy rim all around with lots of sesame seeds sprinkled on top and coated with the water from dried dates to give it a reddish brown color . . . There are only a handful of genuine Kashmiri Qulchaa bakeries in Lahore, one of the best being located in Gawalmandi . . .
Real Kashmiri Qulchaa (served with SALTY tasting Kashmiri tea) is about the size of a regular Naan, it has a ribbed appearance in the center and a puffy, raised rim or boundary all around, dried dates are soaked in some water and that date water is brushed on the unbaked Qulchaa and then SESAME SEEDS are sprinkled on it and it is baked. Also, there is a special ratio of whole wheat aataa and maidaa with a little bit of salt that is used for the dough ... Also, before making the dough, YEAST is activated which means take a tea spoon yeast powder (the powder is in the shape of small granules) and mix it with a quarter tea cup of slightly warm milk and let it sit for 10 minutes . . . Now the dough is made by mixing this special ratio of whole wheat flour, maidaa and salt with the activated yeast and left in a warm place for a few hours (anywhere from 1 hour to 3 hours) . . . when the dough has risen (NEVER USE BAKING SODA for real Kashmiri Qulchaa) the dough is used to make balls (pay-rraa) and pressed with the fingers in the middle to give it a ribbed appearance, while the rim or boundary is left thick and later will become puffed and raised. This rolled out pay-raa is then brushed with date water and sprinkled with sesame seeds and baked . . . as Kashmiri kids growing up in Lahore, we used to detach a part of the rim from the Kashmiri Qulchaa, open up the rim's puffy semi-circle and pour in some fresh dairy cream into it and eat it ... yummy! What you are showing in your UrduPoint video is a thick salty version of ROGHNEE NAAN with the difference that this thing that is being shown is a thick, stuffy Mini roghni naan type concoction . . .
