    Cool video. :) Since my family is Mexican we make ceviche often. We marinate the raw fish in lots of lime juice. Then we cut chop tomato, onion, cucumber, avocado, and cilantro. We add ketchup, hot sauce, and salt to the vegetables and mix it. Then we add the fish, mix it, and put it on tostadas and add more hot sauce. I'm the vegan one in the family so I have to make it differently. I like to use jicama instead of fish, and I grate the jicama into little pieces and marinate with lime. Or sometimes I like to make it with mango instead of jicama or raw fish and I don't add ketchup to this version of my vegan ceviche. I haven't tried putting coconut, but that a good idea.

      I'm Mexican too! I use cauliflower I just made some yesterday gonna eat some for lunch rn! Sooooo yummy but totally different than how she does it lol I make it like regular ceviche just with cauliflower instead

      I always found Mexican ceviche weird since I'm Peruvian and we have pretty simple ceviche hahaha

      yeah my family makes it often too.. and I always use soy meat to replace the fish and surprisingly it tastes the same and I even fooled some of my family members to thinking it was the real civiche! 😂

      +theshion005 that goes for anyone, on or off a vegan lifestyle, but it isn't something to panic over. I've been vegan for a decade and haven't had any issues with this, and I don't take supplements 😊

      +Vegan Hippie plenty of vegan food has b12. B12 is from dirt, not animals (and unless the animals are grass fed, they're getting supplemented with b12.)

    to address the "does this taste like coconut comments" - both my parents are allergic to coconut meat (i am not) so growing up i never had coconut anything. these DO NOT taste like coconut. if anything they taste more citrus-y cause of the lime juice. i'm obsessed with vegan ceviche now and at all times have at least 2 packages of young thai coconut in my freezer

    Looks so awesomeee! I will definitely try it out! If you'd like to try another version Lauren you could put a base of mashed sweet potato and unsweet corn (like typical ceviche sides) and if anyone doesn't like coconut, mushrooms are a good replacement too! It's pretty easy to find mushroom vegan ceviche in Peru and it's super delicious too! Awesome video!

    That looks delicious Lauren! I've always made my vegan ceviche with soy beans, when they're blended into tiny pieces and then boiled the texture and look of it is almost identical! I could eat ceviche every day man!

    It looks great! I live in mexico and i've tried a vegan cauliflower version of shrimp ceviche. Quite delicious if you ask me, and also very inexpensive.

    If you want smaller shreds on your squash, zuke, cuke, etc., do a vertical cut lengthwise down the side of the veggie before you spiralize.

    So many amazing things about this tostada! This will def be in my rotation! Also, I needs that twirly slice doodad thing now!!
    p.s. I tried that rice paper "bacon" on Monday and.....uhh yeah so that's not happening again in my kitchen lol. Silver lining; never used liquid smoke before but I really liked the flavor, just in something else. Score!

    Holy crap, these look SO good. The recipe is so easy too, I'm going to try these, though probably in Taco form, not a fan of crispy tortillas. Hope I can get my hands on young coconut meat. Guess I'd have to buy fresh coconut.

    I sugest you to use some tomatos to make a marinade sauce. That is pretty much the essence of a good ceviche

    Lauren! Do you think if you were to marinate coconut chips that they would slightly rehydrate? That could be another cheaper option. I know I seen bags of coconut chips for a couple bucks at winners :)

    Come to Tijuana, I'll invite you to some other types of Mexican vegan seafood, (among several different kinds of Mexican food) so you can do those things on your channel (your version of them of course). By the way, the coconut ceviche, instead of buying the bag, next time buy a young coconut and use it's flesh, it's way cheaper and it's the same... also, you can do ceviche with coliflour... if you like kinda sweet ceviche, do it with mango (the flesh is the same consistency)... and if you don't mind if it isn't raw.. the most common way here is with TVP and if you don't like soy, you can use cooked mushrooms, but, those are better for the seafood cocktails. You aren't Mexican and this recipe actually looks damn good... and this is coming from a Mexican, so kudos.

    The best way to have ceviche vegan is using soy. A lot of mexicans have it, without being vegan. Tastes exactly the same; delicious.

    I'm from Brazil so I've eaten all these ingredients by themselves and mixed. I've also been to Peru and eaten authentic ceviche many many times. Although I'm vegan today, I doubt this will taste like ceviche. The young coconut meat will be the closest to texture to seafood used in ceviche. BUT, and that is a big but, where's the fishy taste of ceviche???? If you don't care for the fishy taste then the lime and cilantro will do the trick. Good try, though!!! Lauren, you're one of my favorite cooks because you are so fearless! :)

      ceviche was one of my favorite dishes and when I went vegan I thought I would miss it but I make one with lentils instead of fish and everything else exactly the same as before (just change clamato for v8) and it is amazing. I am not sure what type of ceviche you've tried since I am from México but maybe you could try to make it, it's closer to the original taste of ceviche I really recommend it :)

      +claudia selene thanks Claudia. What I noticed after going vegan is that I don't really miss the dishes of before but flavors. For example, my grandmother used to make me shrimp with scrambled eggs, tomatoes, cilantro and onions. I loved it. I could it every day. Now I can just add cilantro to any dish and I get the same satisfaction. So it wasn't really the whole dish that made the memory but something that "popped" in the dish. I noticed when I crave seafood if I eat some vegan sushi the seaweed curbs my craving. so in that sense, adding lime, cilantro, red onions will give you the "ceviche" taste. :)

      +mytreasuredcreations yes that's the same for me honestly I was so surprised as how easy it has been I debated it for months and now I wish I had done it sooner I am the happiest I've ever been being vegan.
      and the lentils ceviche is one of my favorite vegan dishes like you said with the cilantro and everything else I don't miss the fish at all I just wanted to share the option because I seriously love it :)

      +claudia selene Right. :) I've added liquid smoke, learned about it here on hot for food, :) thanks Lauren! ! to beans and my kids think I added sausage or bacon to it. You should see how they eat rice and beans when I add liquid smoke. :D I don't do it all the time because I want them to appreciate the taste of food for its original taste too. My husband who ate meat 3 x a day gets his satisfaction just by having a filling meal with savory foods like rice, beans, mushrooms and vegetables. Vegan is so doable!!! People just need to figure out what flavors they like and go for it. In the end all those flavors can be found in the plant world. :)

    You guys should do a fast food challenge where each of you recreate one of your favorite fast food items (and be like specific to the company & item menu) that aren't vegan! I love doing that with my favorites so I'd love to see what you guys come up with :)

    THIS CHANNEL HAS MADE MY LIFE SO MUCH BETTER! Not only is my family not vegan but they don't approve of this lifestyle (thats southern parents for ya).. I make your recipes daily not only so I can eat all the amazing food but to show my family I can eat anything I want still!     ceviche was my favorite dish ever before going vegan :') my mom is making some tomorrow but now I know what I'm making instead ;)

    Yes! finally vegan ceviche doesn't get much love. I just made some cauliflower ceviche Monday!

      Camille&Bambi yes! well I am Mexican so we do Ceviche a certain way but it is delicious! (I don't have exact mesures though)
      first you boil the lentis normally and let them cool down, you can add a big piece of onion and cilantro while boiling if you want for added flavor and remove it later.
      then you would need to chop finely cucumber, tomato, onion and carrots and about 2 chilis (the amount is up to you I just add a little bit more of cucumber than everything else),, then I mix everything and add the juice of 3 lemons (more or less) add a little bit of salt and then add the a can of v8 (vegetables instead of clamato), then add the lentils and mix everything together I add a little bit of ketchup and salsa (but that is optional)
      and that's it you serve then on tostadas and add some avocado on top. I hope I explained myself clearly :)

    I think that the flavor are so interesting!!! I'm from Mexico, I can give you a recipe for ceviche... In south America are many kinds of ceviche, the most popular are with fresh fish marinated with lemon juice just for one or two hours, and raw chopped veggies. The vegan versions uses textured soy protein, cooked cauliflower or soft coconut, with the same ingredients than the original version... I like to use tomatoes, coriander, red onion, carrot, cucumber... When it's made from coconut, I like to chopped some mango, but just one or two... And we used for toppings, the most delicious avocado and Valentina's hot sauce! Yum yum! Today I'm eating the cauliflower version... I love you guys!!! I hope some day try this recipes!!
