The reason I ask is because I would like to have control of my 3 domain emails via my own email server, however I was told it won't work from a residential connection? I don't see your instructions on smtp server setup in the email ... Am I missing something?

You need to take business connection. Residential connections are not static usually.
ERROR: No such host is known. Can you help me and tell me what's wrong?

Perhaps port 25 is blocked on your VPS.
