    I'm interested in using acacia as an emulsifier, specifically adding some flavor oils to make my own sodas. How well does acacia work as an emulsifier when dealing with oil? How would I go about integrating it? What measurements should I use?

      Acacia gum works great with oil. You'll need to shear it in with your oil and soda. It'll take some experimentation to get to the desired consistency since it really depends on what's in your recipe. Try starting at around 5% by weight of final product and adjusting upwards or downwards as needed.

      @@livlevi8064 You can try it. The thing about putting it in the syrup first is that you'll be thickening up the syrup and then diluting it with water. So either way it'll take some trial and error

    can this work with Kombucha? I want to mix fresh juices to my Kombucha and I don't want the juice to go to the bottom. is this better substitute then Xanthum gum? Does it mix easily? thanks

    I'm making homemade Kahlua ( coffee liqueur) and don't want to use high fructose corn syrup. If using this thickener...will it separate if bottled and stored or does this need to be consumed immediately?

      It will definitely keep it together for a period of time, not indefinitely. But if you have arabic gum in there you can always shake it up to reactivate the emulsion.

    I'm trying to make a sugar free simple syrup and have ordered some Acacia Gum from your website. Would you recommend xantham gum to enhance the syrup like consistency or any other ingredients to simulate the sugar effect for the mouth feel? Thanks

      I know this answer is late, and since they didn't answer, I'll share my experience with Xanthan gum in simple syrup for you and/or others who might ask this.
      Xanthan gum creates a grainy texture. I even strained it, and it still was able to leave that residue behind in my simple syrup. (I used allulose as my sweetener) It's tasteless and doesn't even bother you when used to add to recipes, but the eye appeal is off.

      you certainly can, it'll be mostly acacia with a small amount of xanthan. We prefer lambda carrageenan ourselves for dairy-based beverages.

      The color spectrum for acacia gum is white to off white, color is not indicative of performance or 'freshness'.

    I have not seen any gum Arabic that is not food grade. I buy it by the pound on amazon in powder form to make a binder for my watercolor paint. It’s also good grade. I have bought it in its raw form as well. Food grade. As it is FULL of health benefits.
    I’d be interested in knowing what ones you say are not food grade?
    I get wanting to sell your product and that’s great, but I haven’t seen one not food grade so I also believe in honesty. If I am wrong and there is a gum Arabic not food grade then I would love to know.
    And I am talking raw or powder form. Not gum Arabic already mixed for something special such as binders and for photography

      There absolutely are different grades of all gums. They are used in industrial applications, for instance, fracking and as you mentioned art. There are also cosmetic, pharmaceutical, and lab grade versions. They all refer to the purity of the gum and the standards are increasingly higher. Cosmetic grade is below food grade and is approved for use in cosmetics but on food. Pharma grade is above food grade and thus pure enough for human consumption. Industrial grade is not. Unless a product specifically states that is food grade or above you cannot assume it is safe to consume. Because industrial grade is cheaper to manufacture it will typically be sold for applications that are not meant for consumption.

      @@Modernist_Pantry yep. Ok. I googled and Wikipedia to death and could not find a raw gum Arabic not for consumption. The same powdered form is used for candy and pharmaceuticals. But ok. It is a wonderful find and excellent for both health and art. I use the same for both and I have purchased many different ones. Prepackaged is much easier for most people though.

      Gum arabic is harvested from the exterior of the acacia tree. When harvested, bits of bark, stones and and insects can stick to the gum. If you purchase incense-grade pieces, you will see the bark and stones in the pieces of gum arabic. That is what makes it not food grade.
      Non-food grade gum arabic is simply dilluted in water and strained. Once the dirt, insects, rocks, and bark are strained out, the gum is then food grade.
