+Yan Ting Kek So happy you liked it :) I like to add white chocolate because it adds a great flavor and also gives the cheesecake a firmer texture. You could use milk chocolate or you could leave it out- there wouldn't be a need to replace it with more cream cheese. Hope this helps!

Not 6-24, 8-8 ;) You could try the freezer, I prefer the fridge because it lets the gelatin do its thing. I would suggest making it the night before and chilling it overnight. That way you don't have to wait that long- it'll be done in the morning.
How long was your cream cheese left out to room temp for? I left mine out overnight and when I mixed it in with the rest of the ingredients I was left with a speckled mess :/ it still tastes good but I wanted a smooth look, like yours
I had been mixing with my spatula, then moved on to my hand-mixer (for like 15 minutes) and the cream cheese specs never disappeared :( Maybe if I leave it out longer next time, it'll work

Overnight should have been fine! The key to a smooth batter is to mix! You need to just keep mixing until all the lumps clear.
