I made it just now! I didn’t have black beans so I used Mexican rice. I used half regular nacho and flavoured chips It looks fantastic!! I will let you know how it turns out!! Also added franks hot sauce powder for heat Smells amazing!!
Dave yes on us & the girls because my wife makes a recipe dish almost exactly like this one & she got the recipe from our sister n law who is tatino/ mexican, her brother met her years ago when he was in the army. And they they have 3 daughters that can all cook great Mexican food. Keep your stick on the ice pal.

Hi Dave. Fellow Canuck here, on the other side of the country (Vancouver Isle). I love everything Mexican and I made this today. Am enjoying it right now. Super recipe, just delicious. I had everything I needed except the nacho chips. So I added a bit of rice instead. Could have used more, but it is very tasty, and I will definitely make it again. But I will definitely try it with the chips. Am also thinking that I could add some red and green bell peppers and will try that too. Thanks for a great recipe.

In Watertown N.Y. you can get split chicken breast on sale lots of time at Hannaford super Market for 99cents a pound. I just bone it my self and freeze the bones to make stock later.

Yes 👍, that Mexican recipe looked PERFECT for baking in a Cast Iron Skillet. Chicken has gotten so expensive... we can buy a cooked Rotisserie Chicken for less money than we can buy fresh Chicken. That's pretty sad but true. For many Seniors on a tight budget "a Chicken In Every Pot" is bygone days of memories but it certainly does look mighty delicious 😋.
@@verlenerobinson3772 Absolutely agree. Yes, spicing things up when cooking homemade foods are better than store prepared foods. Husband and I don't tend to go out to restaurants unless we know what to order that suits our personal tastes. Too many hit-n-miss menu choices out there.
I wait for a sale at Walmart or Real Canadian SuperStore and buy 4 for $10 or I’ll even go as high as $13, lol, for the tray of 4. I love the Portion bags - I place 1 breast per bag and then bag those and place in the freezer. 😘
I do love Mexican food. I tend to not cook with sour cream, preferring to have it and avocado or guacamole as a cool garnish when I make my chunky chicken and mushroom and peppers chili.
