- I’m harvesting the urad bean, also known as black gram and many other names, and will show you the journey these beans make from the field to your plate. (Or banana leaf!)
➡️ I’ll prepare today’s dishes in a traditional way: soaking and removing the skin, creating a bean paste on a stone grinder, and cooking over a wood fire on a clay stove.
Today’s menu consists of chili shrimp ulundu vadai, sambar, crispy dosa, and more!
Urad bean is related to mungo and is popular throughout South Asia.
➡️ Not only can it be used in soups like sambar, a vegetable mix with curry and tamarind, but it also goes well with sweeter foods like dosa, which is like a lentil-based pancake.

අපොයි...! පාන්දර පහ පහු වෙන්නත් තව විනාඩිම දහයක් ඇත..නිදි ගැට කඩමින් පාන්දරම ඇහැරෙන කුකුළන්ගේ අදෝනාවට නින්ද ද එපා වෙයි.අකමැති සිහිනයක් බලෙන් පෙනෙනවා සේය.සුපුරුදු පරිදි ජනේල් පියන් විවර කල විගස මවෙත එන්නේ සීතල පින්නයි.කෙමෙන් මුව සිප ගන්නේ රෝස මල් සුවදට මුහු වුනු රුක්අත්තන මල් සුවදයි.නමක් නොදන්නා ලා නිල් පාට මල් වැලේ රොන් ගන්නට එන කුරුමිනියන්ගේ රූං රූං හඩද වරදිනේ නැත.මිනිසා යනු සොබාදහමය.සොබාදහම යනු මිනිසාය.සියලු බුදුවරයන් වහන්සේලා බුදු වෙන මේ හිමිදිරි උදෑසන මට පසක් වන්නේ එපමනකි..💛🌿
උදු අස්වැන්න සාර කරගන්නට තාත්තා යෙදුවේ කුකුළු පෝරය.පදුරුවල කරල්නම් ඇති තරම්ය.ගහේ පංචාංගයේම ඇති බූවා ඇගේ ගෑවුනාම කස කසා ඉද්දි තවත් ඉස්තරම්ය😄උදු ඇට කිලෝවක් එකතුකර ගන්නට කරල් කිලෝ දෙකක් පමණ කඩන්නට වෙයි.එය ලේසි නැත.තාත්තලාගේ තරම්ම අත හුරු නැති මා මෙයට කෝඩුකාරියකි.ගෝනි මලු එකහමාරක් විතර කඩාගත්තේ ඉරත් මුදුන් වෙලා හෝරා දෙකක් ගියපසුය.කරල් පැලී ඇට වෙන් වෙන්නට තරම්ම කට්ට අවුවය..🌞☀️
දින දෙක තුනක් අවුවට කරවුනු උදු කරල් වැඩි හරියක්ම පැලී තිබූ නිසා,ඉතිරිය කකුලෙන් පාගා ඇට වෙන්කර ගැනීම ලේහෙසිය.උදු පියලි පිටින් ආහාරයට ගැනීම සාම්ප්‍රදායික ක්‍රමය උවත්,බොහෝ ආහාර සදහා එහි ඇති කලු පැහැ පියලි වෙන් කරගත් පසු පිසීමට යොදාගනියි.
වරුවක්ම දියේ පෙගුනු උදු ඇට තෝසෙ ගලේ රවුම් ගහන්නේ ටික ටික නොපෙනී යමිනි.හොදින් ඇඹරුනු උදු මිශ්‍රණයට කැකුලු හාල් පිටි,කපා ගත් රට ලූනු,කරපිංචා,කොච්චි සමග ලුණු ගම්මිරිස් යෙදූ පසු හරඹය ඉවරය.තෙල් තාච්චියේ රන්වන් පාටින් පැද්දෙන හුරුබුහුටි කඩචෝරුව ඉපිලෙමින් සැරසෙන්නේ ඊලග කනිසමේ අපේ රස නහර පිනවන්නටය.දෙකට කැපූ උදු වඩය මැද්දට බැදපු කූනිස්සො බැදුම පුරවා කන්නට අපි හැමෝම කැමතිය.එදා හවස් යාමයේ ඉගුරු දැමූ තේ කහට සමග තාත්තලාගේ විඩා නිවුනේ එලෙසය..🥯🍤
චූටි අක්කලාගේ එළවලු කොරටුව තිබුනේ ගගේ එක් ඉවුරකට මායිම් වන්නටය.පහු ගිය මාස කිහිපයේම කිහිප විටක්ම ගග පිටාර ගැලුවේ දාරානිපාත වැස්ස එක දිගටම ඇදහැලුනු නිසාය.කොරටුවෙන් අස්වැන්න නෙලන්න පටන්ගත්තා විතරය.ගං වතුරට කොටු වුන කොරටුව මංදපෝෂණය හැදුනු දරුවෙකුසේ බලාසිටිද්දීම බාල විය.අක්කාත් සමග කොරටුවේ වම්බොටු පැළ දෙසීයක් පමණ සිටවූ මටත් ඉහිලුම් නැත.හැමවිටම "සොබාදහම" අපව දුකට සතුටට දෙකටම හුරුකරන්නීය.
කොරටුවෙන් කඩාගෙන ආ බම්බොටු,මෑ කරල්,බණ්ඩක්කා ගොන්නට බඩ ඉරිගු කරලක් එකතු වුනේ ගෙදරදීය.වට්ටියට අඩු වැඩිය පුරවගන සෝදගත් එළවලු ටික අතේ තියාගනම කපාගත්තේ ඉක්මන් වගේම සාම්බාරු හොද්දට ලොකුවට හැඩතල අනවශ්‍යය නිසාය.වියලි මිරිස්,සූදුරු,උදු තෙලේ බැදෙන විට අමුතුම සුවදකි.එය සාම්බාර් හොද්දේ රස රහසකි.එකතු කල තුනපහ සමග එළවලු යහමින් තෙම්පරාදු වූ පසු ඒ රස මුසු වන්නේ පැයක් පමණ තැම්බුනු පරිප්පු මිශ්‍ර වතුරටයි🥘🍱 දැන් දැන් අපේ ගෙදර සයිවර් කඩයක රස සුවද ගෙනහැරපායි..
යහමින් කරපිංචා සමග කොච්චි ද එකතු කර සියඹලා ඉස්ම දා කෙටූ කොච්චි සම්බෝලයට ඇත්තේ මතක හිටින ආවේනික රසයකි.හැම කෑමක් සමගම උචිත නොවූවත් තෝසෙ සමග සාම්බාර් හොද්දටනම් ඇත්තේ කදිම ගැලපීමකි.අදනම්.. රස මරතැහැකි.සිත සිටින්නේ අහිංසක පලිගහන්නියක සේය🌮🍲🥗
පදමට පිපුන තෝසෙ මිශ්‍රණය රත් වුනු තැටිය පුරා වක්‍රව දිය රැල් නංවන්නේ මුහුදු රළ සේ පෙන බුබුලු නංවමිනි.තල තෙල් දැමූ තෝසයේ මතුපිට කරවෙන්නට විනාඩි කීපයක් ගතවෙයි.අපේ ගෙදර කර කර ගා හැපෙන කඩදාසි තෝසෙ හදන්නේ මම විතරය.එක් දවසක පුතා හදන ඒවා වැඩිපුර රසය කියා කෑම මේසයේදී තාත්තා අම්මාව ඇවිස්සුවේ ඇය හැදූ පත තෝසයක්ද රස කර කර කමිනි..😄
පෙර කියූ සේම අදනම් කෑම මේසය සයිවර් කඩයකි.අඩුවට තිබුනේ පනිට්ටුවට දැමූ සාම්බාර් හොද්ද පමණි.කර කරස් ගා හැපෙන කඩදාසි තෝසෙ එකින් එක අතුරුදහන් උනේ අපටත් වඩා තාත්තාගේ සයිවර් සිහිනය මල්ඵල ගන්වමිනි..😍
සොබාදහමට ලං වෙන්න.උතුම් මිනිසෙකු ලෙස මේ කෙටි ජීවිතය ගතකර නික්ම යන්න..💛🌿

From 🇸🇬 Singapore: Wow my kind of food: thosai, Vadai,Idli etc...i like Crispy thosai with coconut or tomato/red chilli Chutneys..with "tempering" with mustard and curry leaves!!!...and Thosai PODI with Sesame oil..(Gingelly Oil)..(i.e POWDERED DHALL+FRIED CHILLI,MUSTARD,HING etc WITH CONDIMENTS) with masala potato filling or Rava (Semolina) thosai..And your Thosai skill...FANTASTIC!!...mom always tells me move in one directionand always have an even thickness..and for crispy much thinner..yet a pancake that would not stick and burn on the pan..So your skills were excellent!!!.and combined with, "IDLY" which UN certified as healthy food. "IDLY" , i.e steamed rice cakes and Fried VADAIs..i.e the savoury donuts, made of Urid Dhall or ULUNDHU!!...all of which I learned to make by watching my mom...It was also exciting to see the Granite stone "AATU KAL" (in Tamil)...the manual stone wet grinder..nowadays we use electric wet grinder with stone layered insides. Vadai is to South Asian food as Croissants are to european food i guess. I like Vadai and Chutneys combinatuons with brewed Indian coffee!!..and on a cool rainy day... its really heavenly to eat these fresh out of the pan!!!....also i remember eating a variation made with Banana flowers..so yummy!!! I guess like thosai..APPAM and "String Hoppers" or IDIAPPAM..which has different variants...some eat it with SOTHI...i prefer vegetarian KOOTU, a mixed vege non-spicy ..coconut milk and yogurt curry..something like Thai green curry!!!
These foods helped me tide over many times when I was feeling homesick, for many years when I studied or worked and resided overseas. Thanks for showing a new front ot making this and enjoying the food with these visuals..so in Tamil we would say:

Before these thosai and vadai were called as Tamil food in sri lanka. Happy to see now sinhalese cook these foods too. During the civil war time we did not have electricity in our northern sri lanka. My mom , grandma all my Tamil people used to make thosai and vadai with this Aaddukal.
I'm also from Sri Lanka. We are Sinhala talking people in Sri Lanka but generation to generation we always love and cook ulundu wade,paruppu wade those, itli etc.
And we have shops full of the above foods.
