Sounds like the RPM spins up pretty high without beans, I'm sure there's a taste difference with the electric vs hand grinder as a result. Have you compared the taste of both?
He clearly didn't use the espresso grounds for his pour over. He re-ground for the pour over. We literally see him do it in the vid. Those are much coarser than the espresso grind test.

Is there only 4 increments for espresso grind? Is there a way to adjust by smaller increments?
yeah, how many seconds diff per click? Seems like they need to double the adjustments
the main problem of such grinders is the plastic gears in their gearbox. They get broken after short time

Depends on the recipes you use, there is no ultimate recipe for any brewing method
