Maria Luna you can buy double sided fabric tape!!! They sell it for situations like that, if you're in the US you can probably find it at drugstores, Walmart, Target, etc.

How do you hem knit fabric with a straight stitch without it being stiff and not stretchable?

She was probably using a stretch stitch; it looks a bit like a series of lightning bolts up close but from any distance it looks like a normal straight stitch

O-oniichan // have you thought about buying a double needle? You can use that with a straight stitch and it still stretches. It looks very professional. If you can't get one then a narrow zig zag would have to do.

From scratch? You could use fabric glue but sewing is not that hard so it would not be worth it
