I'm a long time lurker, I love your content! My mom always made SOS the same way you did, but with leftover turkey from Thanksgiving instead of beef. It's so good and so comforting!
To help keep your new pots from some scuffs and scratches put a paper towel in between them when you stack them together. My dad always used dried salted beef that came in a jar. He made medium white sauce and added sliced hard boiled eggs and served on toast as well. I loved it.
My Dad said they ate that in the Army. SOS meaning sh1t on the shingles. Lol. At least that is what they called it. Me, personally, I prefer chicken, and I use a can of cream of mushroom. You can put what you want in the meat. I put it over toast or over white rice and a side of green beans or whatever vegetable you like.

I think you should probably cook your meat and drain off the grease and then season the meat. Otherwise you’re just throwing your seasoning away with the grease.

When I make SOS I add extra beef Bouillon instead of whipping cream, then milk if I have it. We eat it over biscuits or mashed potatoes
