Looking for help on how to create a software point like in allen Bradley. For example if I wanted to use a binary bit it would be B3:1/0 where you can create data tables on the left I am wondering if and how I can create data tables like this rather than using hardware inputs and outputs for all my programming?

Using Off Delay Timer will solve your problem. For example consider that Q 0.0 IS YOUR MOTOR AND I 0.0 IS YOUR STOP BUTTON ,THEN YOU CAN EASILY PERFORM THIS TASK. I hope it is clear to you !
It depends upon the type of input (i.e NO or NC ) you have used for triggering the timer. It is possible to trigger off delay timer even using 1 signal .
