    I made this yesterday ate it for lunch! It really is beautiful and delicious! I didn’t make my sauerkraut but I will! Nice recipe, Carol!

    Followed your kraut video. Success! The Ball jars with the springs and vented lids are brilliant. Cheap and easy. I'm hooked. This salad looks so good. Crunchy sweet and sour and salty. What's not to love?

    This sounds like a great recipe for using the sauerkraut. I will probably cut the ingredients in half since it will be just me eating it. Do you think I could replace the sugar with honey? I did make a batch of sauerkraut with a Ball fermenting lid and spring. It was successful but a little too salty. I used two teaspoons for one shredded cabbage after removing two cups for cole slaw. I think next time I will only use a half tablespoon (one and a half teaspoons) for the same amount of cabbage. Thanks, Carol.

      Nan Russell I don’t see why honey wouldn’t work. The flavor will be a bit different since since honey has more flavor than sugar does but I think it would still be good 😍

    Have you thought about fermenting your kraut, celery seed, and carrots together? I'll make some of my kraut this way and some plain just for this salad. I am a German/Japanese Grandma.

    Store sauerkraut is on the soggy side. I’m going to have to give that a try and make my own sauerkraut. I may like it. But the can not so much. TFS.
