How do you separate layers in AI? What is the shortcut?

no shortcut! once you created all the layers you select the object, an the current layer will appear a small dot and you drag the dot by hand on the layer you want

@@OllySpin In fact, there is a more practical way. You can click on the desired layer and in the right menu (the three-line menu) select 'Release to Layers'. This way, all the shapes become layers.
