Hi Sam, I'm also a DIY cook and I have a friendly suggestion. Since your going to cook the carrots and parsnips in water anyway. I take a rather large pot and I have a metal basket that fits inside. I put the scraps on the bottom, along with bay leaves and herbs. (I also debone my bird, makes more room for stuffing, and put the bones in the stockpot. When the veg in the basket is tender I pull it out. I let the stockpot simmer away all day to concentrate flavors and season with salt (or stock cubes) at the very end. Love that you made your own pan gravy! It's the best! Dishing up deliciousness as always!!! Plenty of leftovers for Boxing Day bubble and squeak too, bringing the cost down to much less than 10 quid for the dinner! You deserve so many more subs! I use my bacon to wrap the bird up in for extra flavor and gravy lusciousness, instead of making pigs in blankets, but your method works great too! I use them tater peels to make homemade tater crisps as an extra side and they are soooo good!

I save stale bread (or the trimmings if you cut crusts) in the freezer over time so I always have the base for a stuffing.
