Hopefully GGK clicks with you, he's one of my favourite authors and Lions of Al-Rassan is a strong contender for my favourite Fantasy book.

I dunno how helpful this will be to you, Tori as the only Fantasy westerns I've read have been Stephen King's Gunslinger, and Joe Abercrombie's Red Country (its not a proper western with guns, but its got that vibe/setting) but Jim Butcher has a short story that takes place in his Dresden Files Universe called "A Fistful of Warlocks" and you could read that one its own... its been awhile so i hope I'm right on that, but i remember liking it.

A book I'd recommend is Iain M Banks' The Player of Games, its part of a series but they're really just 9 standalones and a collection in a shared universe. Player of Games is the 2nd and shortest of the Culture novels so while Banks is still somewhat rough around the edges he grew a lot from Consider Phlebas (his debut SF) and its a series I am constantly struggling to pick a favourite. He wasn't an unpopular author during his lifetime but he's still rather niche on booktube.
I also recommend Inversions, also by Iain M Banks.
I'm recommending them because The Culture is my personal Sci-Fi book series, and while they're great books and popular for a reason, i want to see other SF talked about as well as Red Rising, Sun Eater, Dune etc.
