For beginners I have to shoutout Daniel Liang again, "Introduction to Java Programming and Data Structures" is great. Or try "Head First Java" by Kathy Sierra and Bert Bates. Pick one. After reading one of those I would honestly say drop the books for a minute and start working on projects. Nothing too crazy, no need to reinvent the wheel, and Daniel's textbook has a lot of exercises you can take inspirations from.
