Theres no sense in taking out all that yarn , at all. Just pick up your two rows of stitches leaving one row between them (using much smaller needles) then take out the one row thats inbetween them .
I tried to unpick the rib to lengthen a sweater but found it soul destroying so got out my scissors,all I lost was a row of yarn,found it worked for me as I don't have a lot of patience with unpicking.😊

Thanks for your suggestion. It made sense in my head and worked for me to do it this way when working on this project.
