You know the recipe is handmade and traditional when they still use a tea kettle to pour the egg mixture! I felt really homely when I see that scene.

I used to go all the way to buy Tong Heng egg tarts for my grandma when she was still alive although I don't eat it myself. However I have developed a love for egg tarts now & this really bring back nostalgia. I wish I have a chance to learn these skills from a proper master one day & bring it on to the next generation with lots of handwork, love & tradition

What is the basis of Chinese style pastry is the usage of a lard based dough with a water based dough, to create a layered pastry. A western pastry would use butter instead. It is not meant to have butter, since they use the Chinese methodology much like your tau sar piah to make Egg Tarts.

In some countries (i.e. Poland) there is this thing called "nabiał" which is actually dairy and eggs. So I think this is where the misunderstanding comes from

For me, not as good as KFC egg tart. Btw, no glove when working is a big no no. And the kitchen looks sloppy

Sometimes you can't feel well with gloves. They did mention you need to feel it with the touch. Actually, there are food that is actually made without gloves. Sushi for example. Cheese. And, my mom's home made food.

Hmmm saw the kfc kitchen through the counter before, the kitchen hands there didn't wear gloves either. Facts of the day: wearing gloves don't always guarantee hygiene, there bacteria on gloves as well (during manufacturing, packaging and while being used). Fact 2: most chefs, cooks, kitchen hands in restaurants don't wear gloves. So maybe processed food would suit you the best?

I prefer someone who use their hands and wash them than some plastic. I hate using gloves when cooking. If you will die, you will, gloves or not.
