  • Simple Small Batch Chocolate Cupcakes
    Preheat Oven: 350 degrees
    Bake time: 15-20 mins
    Yield: 6-8 cupcakes
    Cupcakes: - 1/8 c sour cream - 1/4 c buttermilk - 1 egg - 1/8 c mixed instant espresso - 1 tsp vanilla extract - 3/4 c flour - 2/3 c sugar - 1/8 c cocoa powder - 1/2 tsp baking soda - 1/2 tsp baking powder - pinch of salt
    Chocolate Buttercream - 1 stick unsalted butter - 1/8 c cocoa powder - 1 3/4 c powdered sugar - pinch of salt - 1/2 tsp vanilla extract - 3-4 tbsp whole milk
    Cupcakes: Preheat oven to 350. Line cupcakes pan with liners. Mix all wet ingredients together in a bowl. Mix dry ingredients together in a separate bowl. Slowly add dry ingredients to wet ingredients until combined. Separate cupcake batter into cupcake pan. Bake for 15-20 minutes.
    Chocolate Buttercream Frosting: Shift powdered sugar, cocoa powder, and salt together in a bowl. Set aside. Add butter to mixer on low. Mix until it becomes lighter in color and appears creamy. Add vanilla. Slowly on low speed add dry mixture. Once combined, add milk; 1 tbsp at a time until your preferred consistency is met.
