What if you have one canasta and the pick pile still has cards, but you have only one card left which you will discard.

It's best not to meld all your cards, so you have cards in your hand to discard to help complete canastas. You can not end the game with only one canasta, you are required to complete a minimum of 2. You must pick up you last melded card from your turn and use that for a discard.

Can you go out with 2 aces and a wild card?

There is no governing body over Canasta like Bridge (WBF or ACBL). However, the most commonly played rule is no. However your group could decide yes and make it a table rule you must remain consistent. Write your roles down. I do no allow it in our game. A meld after your initial/opening meld must have a minimum of 3 pure cards. Let me know if you need further explanation. Enjoy
