Just so you know, Lydia can carry stuff for you. You can trade with her or drop stuff and tell her to pick the items up. If you use the second method she will be able to carry an unlimited amount. Which is great for taking ALL the loot. If you give Lydia stuff to carry, she will use it if it is better than what she currently has. Which is a good thing since you want Lydia to be tough. Be careful NOT to HIT her in combat because she will either attack you or DIE. You are the only way she can be killed so be careful. If you see Lydia kneeling, it means she is hurt and if you hit her, she will die.
Yeah Lydia does get in the way a lot, but that isn't necessarily a bad thing. She is fighting for you, slowing enemy approaches down and giving you time to do stuff.
The more you fast travel, the more often dragons appear. Dragons can be annoying to fight, but the more you kill them, the more Dragon souls you get to power new different Shouts. There is an, in story, reason that you are seeing more Dragons, but I'm not going to spoil it.
Aw don't be so hard on yourself these things happen❤. To answer your questions horses run away if they are badly wounded to save themselves from dying. I believe they heal themselves over time like followers, just be careful where you swing that weapon as it can kill both horse and follower. Dragons will appear randomly now after you killed the 1st one. They are brought back to life by a necromancer Dragon which you meet at Helgen. They do turn up at the most annoying times though. Taking them on your own is not easy. Trolls or in your case Yetis lol regen health over time. Labyrinthian has multiple Trolls outside. My best advice is to run until you can handle one. Try not to surround yourself by lots of enemies try to take them on one to one, as group they can be deadly. Its sort of abiguous as if you side with kamatu it makes it seem she was working with the thalmor, but also komatu hangs out in a bandit cave
