It's called a shadow pass, because that is how you learn it. As you are passing it behind your head, look at the shadow in front of you to see where the bottle is at and when to catch it
It's slightly harder to do with a full bottle (aka working flair). The point is to change the trajectory of the bottle, so that it will not flip. So in terms of a clock hand, on this video the bottle takes off at about 11 o'clock and lands at 6 o'clock. That's more than a 180 degree flip. A full bottle would have to take off at say 10 o'clock and land at 1 o'clock, rotating only about 90 degrees. Obviously, you catch it using a different grip. And after the catch to prevent a spill you should immediately continue the motion.
