Great information. I have just began to study heat exchange in different roasters. I use a corretto style roaster and have wondered what is the difference in the roast will be if I preheat the chamkber, I think you have answered my question. Thanks. SH
should drum radiance also be considered? Especially in a traditional drum roaster.
