Patricia Sweetland-Figueroa gum paste stay soft longer so you can work longer with it , with pastillage you have to work quick. fondant contains fat so does not get complete hard. Pastillage gets bone hard in a day or two. So you can understand gazebo need need to be done with pastillage , cake needs fondant to be coated so you can still bite... Thanks
