In most music writing software, notes that are outside of the range of the instrument are highlighted. In this case, a lot of the cello music is written higher than you would normally play on a cello, so it highlights those parts to let the composer/arranger know that they may want to revise that section.

That's because it was stripped of all Dynamics and articulation, including how 2Cellos slowed or sped up parts to make it sound better, this is just a foundation to play it.
