    I just bought the town cutler utility! My partner and I are just regular home cooks and we share knives, so it was important to get something that works for both our hand sizes (and cuisine choices). We cut a ton of vegetables and yes I’m sure there are better knives etc but the size seemed like a good compromise.

    That shoe compartment is such a killer feature. I've always had an awkward experience putting my kitchen shoes inside my bag so I think that compartment is a lifesaver.

    Been eyeing on this bag for a long time so this review came through at the right time! Have a two hour commute between culinary school and a job I have in nyc, so the bag would make transporting tools and a change of clothes way easier!

    I appreciate you pointing out the issues with the bag, I’ve had such difficulty finding a good bag. Most bags these days are backpack shaped or something similar and they unfold SO big taking up entire prep spaces. I went with an 18 pocket messermeister and it’s so far serving me well

    As a 60-something chef and educator who was never a tweezer guy (but I never worked in kitchens at the Michelin level) I was happy to see a pair of tongs. I prefer 6-inch, and have never liked the locking feature - too easy to break or get stuck IMO-I save rubber bands from broccoli and asparagus bunches to hold them closed in my bag. Finally on tongs...choose tongs with a coiled spring as opposed to a bent-metal spring. They fall out from time to time.

    Thanks Justin! Might have to make a full kit video of my own again! The last time was 2014! Really dig the "roll top" or nap sack style bags! I have the boldric one. My only gripe with it is that it doesn't have a water bottle pocket like your new bag.

    Chef knives to go has a kunz style spoon and there slotted version drains even better than the new slotted kunz. I love both though

      Thanks for watching Darren - what I've noticed is that you need to use one that's got a reasonably strong steel, the cheap offsets typically break or don't hold the shape.

    I’m surprised how few knives you included! I find myself bringing potentially too many knives to work on a day to day basis, leaving my boldric chef backpack with little room for additional tools. Not to mention the slots for knives get taller and taller, and past the second one or so, the pocket goes up to the blade and because I like tall knives most of them don’t even fit so they end up sitting outside the slots loose! Honestly, finding a good backpack that holds plenty of knives upright (hate being on their side, had lots of problems with them sliding loose and falling out), and plenty of storage for other stuff like spatulas, laptop, etc

      I try my best not to recommend shoes, everyone's feet are different (ie: I literally can't wear Birkenstocks cause they're too painful on my arches). Couple brands to try out for yourself: Birchbury makes a nonslip, minimalist shoe that's made with leather. Black Vans are also a go-to.

    Those butchery scissors are so badass, its a shame they are sold out. I have a Nenox petty in ironwood and it is consistently one of my favorite knives. This video is definitely making me want to snag another Nenox ^.^

      Hey! I wish I knew of other stores that carried it, I purchased mine at Korin.       Hey Alan! Yeah his IG was where I heard about it (he posted about it in stories, his account is linked in the description) and I just DM'd him to get mine. They were $25 each, plus $12 shipping if that helps - made from hardened stainless 304 steel, you can sharpen them too. He took payment over Venmo lol so this was definitely a "beta" for a potential larger purchase order that I hope he makes soon!

    I'm new to the industry - bought my first "real" knife and I'm looking into bags. Knife rolls scares me - I don't want my knives to potentially move around :( Hardt magnetic system seems great, but I won't lie - it's a bit expensive for someone who's just starting with one real knife in her collection and a few tools that I want to bring to the restaurant. Any advice for minimalistic, but safe, and high quality material?

    Tongs are the best. But you have to get a pair of edlunds. They are the best tongs.

    I use a goruck bag as mine. Able to put my knives upright in the back, and bag sits open standing with flap open and can grab and go from there bag. If anyone wants p ics of this set up, lmk.

    I'm thinking about going back into the restaurant life after leaving it for 7 years, but I know the pay hasn't gotten much better and the lifestyle still is a grind. But there is still that part of me that misses it. Starting over feels very daunting, and I am not sure if its worth the hassle.

      I had left for about 3-4 years, and went back into it more motivated than ever before. I am now further along in my career than I had ever gotten prior being a sous chef at a 3 Michelin star restaurant. I think I was able to tune out some of the extra nonsense that can come with kitchen life that may be harder for someone who hasn’t given themselves that chance to experience life outside of the chef world. I can’t predict your experience, but I’m glad I did it. If you’re like me and feel like you have unfinished business and goals you were determined to achieve and didn’t, maybe go for it.
      I do think age is a caveat. Cooking is a bit of a young man’s game and if you’re like 35+, I’d maybe reconsider, but if you’re still young then you’ve got time and maybe owe it to yourself to give it another go. You normally regret the things you DONT do more than the things that you do. Only you know why you left to begin with, tho.
      Edit:staging is a great way to see if you want to get back into it as well. Stage in a kitchen you’d want to work in (or two) and see if a) you still like that feeling and b) if a potential employer thinks you’re still good enough to hang.

      @@WinedandDined27 Thank you for the advice. Honestly I think a stage isn't a bad idea, I just need to find a professional kitchen that's what I am looking for. I also need to sharpen my skills back to par after such a long break.

      Echoing C's advice here - breaks aren't often talked about, and neither is staging. I'm trying to tell the story more on the channel about the 3-4 month "break" that I took from kitchens and it gave me my mojo back to ultimately do 3 years in Europe. There are also a lot of restaurants now that are doing 4 day work weeks or offering part-time positions if you don't want things to be so "grind-y"

      I'll see if a 2024 update makes sense - still not a ton of changes, but I mostly have new gear that I've picked up to share!

    I’m actually so curious about this bag, as someone who attends culinary school and works full time in a kitchen it would be Amazing if I had 1 bag for everything rather than 2 backpacks and a heavy knife roll

    After 2 decades in the industry it amazes me how many folks walk in to the work place with amazing but expensive knives aaaaaannnnddd then they either get stolen or fucked up. Use beaters like Dkinox for the workplace fam it’ll save you money and tears in the long run. Great vid but do another one on the amount of fuckery that goes on in the galley that would be awesome.
