Try it now. I, too used to think that I will do such sewing stuff when I will get better at it. I used to stall myself so much. But only time we people learn when we attempt such things.
Practise it on old scrap fabric, like some old pillow case, or worn out bed sheet etc. Follow the exact measurements she is doing in the tutorials to save yourself from any further confusion. Follow her as it is and just sew it.
