Karahi Chicken - Urdu/Hindhi | Simply Samina

- There are many ways to make Karahi chicken, this recipe uses onions, I also make with no onions.
Ingredients:
- For the Chicken:
- 1 kg chicken, cut into small pieces, I used two baby chickens
- 4 tablespoons ghee (or vegetable oil)
- 2 medium onions, finely chopped
- 4 green chilies, chopped (adjust to taste)
- 1 teaspoon each ginger-garlic diced
- 5 tomatoes, chopped
- 1 teaspoon crushed red chilies (adjust to taste)
- 1 teaspoon turmeric powder
- 1/2 teaspoon black onion seeds (kalongi)
- 1 teaspoon curry powder - Alamgeer Foods
- 1 teaspoon ground cumin powder
- 1 teaspoon coarse black pepper
- 1 teaspoon fenugreek (methi)
- Himalayan pink salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Greek style plain yogurt
Instructions:
1. Heat the Oil:
In a large karahi (wok), heat the oil over medium heat. Once hot, add the onions and sauté, also add ginger/garlic until they turn golden brown.
2. Add Chicken:
Add the chicken pieces to the karahi and cook until they are browned on all sides.
3. Add Tomatoes and Spices:
Add all the spices and stir until you can smell the spices roasting , add the chopped tomatoes and salt. Mix well and cook until the tomatoes soften and the oil starts to separate from the mixture. Add yogurt and methi.
5. Simmer:
Cover the karahi and let it simmer on low heat for about 20-25 minutes, stirring occasionally. This allows the chicken to cook through and absorb all the flavors.
6. Finish with Garam Masala:
Once the chicken is tender, sprinkle garam masala over the top and mix well. Cook for an additional 2 minutes.
7. Garnish:
Remove from heat and garnish with fresh coriander leaves and julienned ginger. (optional)
8. Serve:
Serve hot with naan, roti, or rice. Enjoy your delicious Karahi Chicken!
Tips:
- Adjust the spice levels according to your preference by adding more or fewer green chilies and salt.
Most of the spices I used were from Alamgeer Foods Limited hence you see me using directly from packets.

Looks delicious. Samina have you had any problems cooking onions. Mine have become hard and chewy. Looked it up and apparently they have bolted due to the heat. I cant cook with them at present. So frustrating.
