How to Make a Straw Star

I love making straw stars during the holiday. I use natural wheat stalks and red thread, which is very festive!
You can make these straw stars out of regular straws, or paper straws as well, just don't soak them beforehand.

This is really cool amd cute but what kind of straws are you using? Do the straws need to be cut? How many should be placed to soak? What is a surgeons knot?

I Googled wheat drinking straws and ended up getting a pack of 500 from a local hospitality supply company. I'm in New Zealand and it cost $38 plus postage.
