I think: 1.she killed PJ and she chopped part of his body or just left it as it was but his size was too big for her web. 2.she didn't kill PJ because he would be too big and too quick with his 400 legs and probably stronger so she didn't want to risk dying or getting limbs bitten off
The real reason is probably because the developers didn't think about it, didn't feel like it, or figured that it didn't matter at that point because Mommy Long Legs would be too set on catching the player. Her whole objective revolves around punishing the player, so after they cheat and escape from Statues, her focus is on finding you. It's the first time she has truly lost control of the situation and she flips shit.
Actually mommy would still be mad at pj and would most likely killed him the real reason is because we escaped statues and she went after us but she died due to the grinder so she never got a chance to kill PJ
