Hurrah for the cookbook! Just ordered a copy. I continue to make your 500k oil on a regular basis. It is the best for frying shrimp, fish and scallops, as well as adding to soups for flavor. I love my wok I ordered from you several years ago. It’s a workhorse.

I especially love that you finished the video anyway after splashing some soup on your shirt! Every time I eat noodles they always splash the soup drops on my shirt! Now I always try to wear an ugly shirt when eating delicious soupy noodles! I'm so sorry your pretty green shirt got the soup splashed on it!
LOL! I did my best not to dirty the shirt! Everytime when I am done cooking, I can't wait to finish eating a few bites in front of the camera so that I can eat the rest without elegence.

Fun life hack for the people in the comments, if you want to make a stock more rich without any effort, put in some unflavored gelatin. It basically fills in for the bones that usually need to create the slick, full mouthfeel.
Around the 7:44 timeframe she says you can use other noodles. And definitely can use choy sum, but cut the stems into smaller pieces or use baby choy sum

Good Grief, your hair is long!! I have a question for you: How is Mantou Bread made? I have a recipe for it and made it, but I'm not sure if I did it correctly.
I always get triggered if people randomly call proteins "scum" or "impurities" which is blood. all of this wont make your broth "non clear" if you boil it high enough , it will ALL dissolve. I did so many tests with comparisons and it makes absolutely no difference, not flavor, not clearless of broth . you all just do it wrong and sadly not even try so you (and always the "big chefs" ) call it scum and just take it out- which makes just no sense. This is the same with starch of potato or vegetables that get out OR rice. I never wash rice, no sand inside, no bad taste, not sticky but fluffy and with potato or soups with vegetables again- you will see a lot of foamy starch but if you continue boiling it it will be gone
skimming it out is about presentation, not about taste. yes it doesnt make a difference in taste, but a consistent look helps in making the dish look more presentable, which is especially important in soups, because plating is difficult with soups, because you cannot add garnishes on top of most soups (this being an exception but my previous point still applies).
Depends on rice type. I use basmati a lot and if you don’t rinse that it becomes very sticky. You shouldn’t let these things distress you so much. Cook the way you want 😅
