I'm the same way when it comes to my apartment. Nothing can stay in one place for a long time. Maybe you should look into moving into a studio apartment/home where everything is open and you can rearrange as much as you like.

you should try pounding the meat with the back of a big knife or a tenderizer to get a thinner softer and crispier katsu maangchi has a really good tutorial for it.
