    All the home brew kits encourage a significant level of cleanliness for all the components, with sterilisation etc. Making juice outdoors with buckets can't be done to that same level. Any thoughts, please?

      Don't stress too hard, they were making cider a long time before they had sanitiser or knew of germs!

      Alcohol kills germs. They made mead for this reason in the dark ages. You couldnt trust the water so weak strength mead saved from getting sick. It was also aparrently frowned upon to be drunk in public thats why the mead was weak.

      I want to make cider without adding sugar, is it possible.

      @@nenkobaylov2470 yes, you don't need to add sugar at all there is more than enough in the juice

      Look at how belgian beer is made you'll get an idea for the cleanliness needed for this kind of cider.
