I personally carry a spare headtorch in winter, plus soft bottles for water, they can be kept against your body to prevent freezing up. Water bladders are horrible to use when it's cold. Really good idea to take a small map or maps, especially in wet and windy conditions, a full size OS paper map is a nightmare! I've always used zip-lock food bags but those ortleib bags do look really good. Finally a whistle attached to the person not the bag, and wear bright colours!

3:02 - puts phone on top of compass in the top of the bag where its cold, likely wet and will mess your compass up. These should be separated from each other as much as possible and your phone should really be on your person somewhere so its usable (ie the batteries are warm) in emergencies. ;)

Still don't understand why your emergency kit is at the bottom your emergency kit should be easy to get at

Personally I'm not convinced by this advice. Everything should be dry bagged in Winter and where's the rest of your food? No emergency/back up food? Got a shovel to build a snow hole but no emergency food? Spare batteries for electronic devices which again should be dry bagged and thoroughly insulated against the cold.
