My Question is what oil do you use to start with? Sesame? or a handy oil that you have in your kitchen and then once you fry the chilies and ingredients what do you do with that same oil do you put it to the side? If you do put the oil to the side what do you do with it and when do you add it?

I believe I used canola oil to fry the chilies, but I did not include it into the mole. I normally set it aside and use it in other dishes.
