The secret is two zone cooking, I run a Slow & Sear in my Weber which keeps coals on one side & the other side is in direct cooking much more manageable. If you don’t have a slow & sear put all your coals onto 1 side only & keep your meat on the opposite side & let indirect cook to getting close to the temp you want check with a temp pen & then sear over the flames to finish. It’s called a reverse sear. Good Luck Brother..You got this! 👊🏼
