"Bad product design" you say about the EDS mat roll not being able to roll out by itself. If it was rolled the other way, the corners of the mat would bend upwards from the table, thus not being perfectly flat.

Lovely setup. Same product as we used for the 12 ESD mats at our work. Fantastic product. Cannot fault it, and we test our mats daily too and we have yet to have one fail yet, even after the 7 years we've been using them. The reason why they roll it up the "wrong" way round is because it's easier for the mat to settle with the fold facing down than the fold curling upwards. Means your mat sits nicely right away after laying it. :-)

I would cut notches in the esd matting at each shelf support. Making the notches just deep enough to allow the matting to slide back enough to make it flush with the front edge of the bench.

I was thinking the exact same thing :) Cut 10mm notches in the mat around each of the shelf supports and drag the mat in towards the wall by 10mm. I couldn't put up with a 10mm overhang at the front. Anyway, great video Dave.

The anti-static mat should do wonders for the bench and kudos to you for inviting the family along! I do enjoy your vids.
For your Workbench-PC: Have you considered one of those Video Capture cards? I don't know in detail, but they should encode the video on the fly (no need for beefy CPUs). If that's within your budget, you can build a tiny Mini-ITX system with a cheap CPU, SSD, wireless keyboard + mouse. Every modern Mainboard has USB3. This way, you can just set a tiny ITX case on your rack and keep the bench clean.
You have to take care of that overhang! An easy fix may be to notch out the back where your shelving arms are so you can slide the mat back a bit. Or just do it right and cut down the entire length and turn the mat around so the cut side is in the back.

I think I would like the mat even lighter. Like white. I like white work areas because it makes it easier to find the tiny little screws and other bits that I always drop.
3:15 perhaps the advantage of the lighter blue compared to the darker blue, is that you won't see scratches and other damages as easily.. maybe you'll see them just as good, who knows, time will tell

Those shelf supports are clearly more than 10mm, so I do not think it is a case of mis-measurement. They look to be at least 1" square supports.

To fix the overhang without cutting the mat, you could just screw a long strip of wood to the front edge of the bench.
From a video-watching standpoint, I think the less saturated light blue it easier on the eyes.
This mat is ESD proof and Sagan proof, hence can resist anything!
