It seems that only one configuration file can handle one kind of data flow. What should I do if I need to handle multiple data flows separately?

You can contribute to the Apache Beam which work to make a Go implementation as well. Also all these use cases can be solved with something like Apache Nifi. Either way nice video to learn Go
