Here’s another tip, oil down your rack with cooking oil or Pam. It helps so that the skin doesn’t stick to the rack. Remember after oiling and placing a piece of fish on the rack, don’t move it. You’ll remove the oil from the rack when you move the fish. Then if you put another piece in that area it’ll stick.

2 cups brown sugar and 1/4 non iodine salt preferably canning salt but any will do. While smoking brush on honey or real maple syrup, I prefer honey. Rinse fry brine off off after about 1 day than let dry in air until it turns translucent than smoke. Or mix 2 cups of salt to 2 gallons of water for wet brine and dry it on racks with light smoke. That Yukon way.

Marlin thanks for sharing this. I have been smoking fish the same way with a little add. I take a spray bottle, mix apple juice and a little bit of wild turkey whiskey. Spray the fish down a couple times with that mixture while smoking it. Good stuff.

I use about the same process. I keep playing with different syrups and now using a sugar Cain syrup wife’s family makes in Florida. I was told to not use idolized salt and don’t wash the salmon and use a fan to dry. Good stuff!

same way I do my smoke salmon except my secret ingredient is a tablespoon or two of celery salt, it is a game changer. I use my Big Chief, I get the best results it seems, my Traeger drys it out too much but its probably just operator error lol. Greetings from PDX
I'm just trying Celery salt for the 1st time right now along with Onion powder and Garlic salt in a 5:1 brine for 14 hrs.
Have a smoky hollow gas smoker, and at that temp it cooked the salmon rather than smoked it. I have had better luck with my old little chief, but it takes longer. Maybe I will try the gas smoker again at like 140

I think I may have to break out my smoker finally. We don't have the big salmon but we do have a kokanee snagging season coming up soon.
My base recipe is 2 cups, brown sugar, 1 cup low sodium soy, a half cup teriyaki, little garlic, onion, and some habanero peppers

You should try just gutting your fish and leaving the bones in it. Cut into steaks like you did. That's how we do it in the Midwest.
