- Tasty diet cookies with oats and apples! NO sugar, NO flour!

Ingredients:
2 1/2 cups rolled oats(230 g)
1 teaspoon baking powder
1/4 teaspoon cinnamon
2 tablespoons cocoa/ carob powder
2 medium apples
2 tbsp water(30 ml)
3 medium eggs
1 teaspoon vanilla extract
60 g dates/ raisins(2 oz)
a pinch of salt
bake 25 minutes at 180°C/ 360°F

Finally a cookie I will be able to eat. Recently had my gall bladder removed. Will freeze the balls and bake one at a time to build my fiber tolerance. Tricky thing. Must avoids fats accept very high grade EVOO, flour and sugars. I'm making tomorrow. Many thanks from Florida.
