This looks lovely. I generally cook a lot of rice and have leftovers, so I am excited about this. Do you ever make your own frozen garlic ginger paste with salt added? I have read that it can be scooped out of the container while frozen. I would love your opinion on this. It really is the paste that makes me save this kind of recipe for special occasions ❤

I enjoy making fried rice but I usually do it 'Chinese' style to use up my vegetables. However, why not spice it up for a change. I have all the ingredients so I will definitely do this. 👍
If I wanted to add potatoes when would i add it and would I increase cooking time or do you recommend adding boiled potatoes after you put in tomatoes and keep timing the same?

Have to ask, are those regular spanish bay leaves or Indian. There's a difference and I don't have Indian.
Not a fan of coconut oil in Pakistani cooking. It completely changes the flavor.
which oil do you use?
I mostly use avocado oil. And sometimes olive oil.
