Because you are not hearing Cantonese dialect. The guy is speaking Taishan dialect, a heavily accented rural dialect from Taishan County in Canton/Guamgdong State. It's even ordinary like most folksy speak for him to pepper his speech with "fuck your mother = ew nah ma" or "dick = lian" this and that with each sentence. LOL!
