Love the demonstration of the soft ball stage, never really seen it before, always have chefs talking in temperatures. Another great recipe!
Kate, great video, could you advise though, I went through your recipe, with a thermometer, got it to 116.5 then added the vanilla but omitted the chocolate chips and it's not setting hard. I did the soft ball test also and it was like in your video. I'm stumped!
You may have to cook it to a higher temperature [1], or you have too much invert sugar (salt too early) or glucose. Adding salt too soon (e..g salted butter) causes more of the sugar to invert which makes the end result hygroscopic and discourages crystallization: it draws moisture from the air. 1. Are you using Celsius or Fahrenheit? Soft ball is 112C - 118C (234F - 239F) at sea level. Drop 1C (or 2F) for every 300 meters above sea level. To get fine crystals you may want to let it cool down to 50C (122F) before agitation.

Seems like a sweet girl but next time it is useful to include the ingredients and measurements in the video seeing this is a cooking tutorial and the most important aspect. I know you did include it in the description but very few people check there and yputube is more about the videos than reading comments and descriptions ect i do like the video quality and easy to understand language x hope i didnt come across as to harsh or rude x keep up the good work anyways!!! It didn't get hard because the temperature should be 160-173. Made that mistake many times.

I recommend using vanilla bean but that’s just me. As vanilla mean is stronger than vanilla extract
